This spiced Turkish sherbet is made by gently simmering freshly squeezed orange juice with saffron and cloves until it thickens slightly into a syrup. Saffron’s golden color meets the orange juice’s bright hue to create a vivid drink. It can also be served warm as a comforting winter drink.
Soak the saffron in warm water for 5 minutes so it releases its color.
Simmer the orange juice with the cloves in a saucepan over low heat for 10 minutes, until it thickens slightly.
Strain out the cloves, then add the saffron water and honey. Boil for 2 more minutes.
Serve the sherbet warm, or let it cool to room temperature and serve it cold.
First soak the saffron in a few spoonfuls of warm water, then add it. Saffron added directly to hot liquid may not release its full color.
