This traditional herbal tea from the Aegean and Mediterranean coasts is made by steeping dried sage leaves in boiling water. Served plain, it is known for its sharp, herbal aroma.
Bring the water to a boil and remove it from the heat.
Add the sage leaves to the boiled water, cover, and let steep for 5–8 minutes.
Strain the tea into cups and serve hot, sweetened with honey if desired.
Important: Do not boil the sage for a long time. Add it to freshly boiled water and let it steep; boiling can leave a bitter taste. Caution: People who take regular medication should consult their doctor about possible interactions with frequent consumption.
