Salata Iraqia is an Iraqi appetizer of chunky tomatoes, cucumber and plenty of parsley tossed with pomegranate molasses and sumac. It is not suitable for freezing, but the components can be prepared ahead and stored separately to mix just before serving, making it a convenient lunchbox option.

How to make it?

Drain

Cut the tomatoes and cucumber into large pieces and leave in a colander for 15 minutes to drain off excess liquid.

Add the herbs

Add the parsley and red onion and mix.

Make the dressing

Whisk the pomegranate molasses, sumac, olive oil and salt in a separate bowl and drizzle over the salad.

Toss

Toss gently just before serving.

Reminder

Do not mix the tomatoes and cucumber as soon as you chop them. First leave them in a colander for 15 minutes to drain off excess liquid, or the salad will become watery.
