A favorite Indian snack, samosas are made by enclosing a spiced potato and pea filling in thin dough folded into triangles, then frying. The bold flavors of spices such as cumin and turmeric bring something different to tea-time.
Knead the flour, oil, water and salt together to make a firm dough. Cover and leave to rest for 15 minutes.
Sauté the finely chopped onion. Add the diced potato, peas, cumin, turmeric and salt and fry for a few more minutes.
Roll out the dough thinly and cut into long strips. Put some filling at the end of each strip and fold it over repeatedly to form a triangle. Seal the edges with water.
Heat plenty of oil over medium heat and fry the triangles until golden all over.
Important: Seal the edges well with water as you fold the triangles, or the filling may spill out during frying. Allergens: Contains wheat (gluten).
