Beat the cream cheese and sugar

Beat the room-temperature cream cheese with the sugar and salt on low speed for 5 minutes, until no lumps remain. Low speed is important: high speed incorporates too much air, causing the cheesecake to puff up like a balloon in the oven and collapse in the center as it cools.

The cheesecake is done when the edges stay firm and the center ripples like a lake when you gently shake the pan. If the center has set, it is overbaked. The top should be deep brown; that is expected.
Reminder
Let the cheesecake rest at room temperature for 2 hours after baking, then chill it in the refrigerator for at least 6 hours; these times are not included in the recipe’s listed times. If sliced while warm, it will not hold its shape and the center will run onto the plate.
