Sarığı burma is a Gaziantep baklava made by gathering a sheet of phyllo on a rolling pin into a wrinkled turban-like spiral. Unlike layered baklava, a single sheet is gathered over itself so air fills the folds as it bakes. Its crispness depends on how tightly the sheet is gathered: too tight and the dough sticks; too loose and it opens up.

How to make it?

Make the syrup first

Put the sugar and water in a saucepan and bring to a boil. Simmer over low heat for another 12 minutes. Add the lemon juice before removing from the heat. The syrup is ready when the last drop from a spoon stretches into a thread and breaks. Remove it from the heat and let it cool completely in a cool corner of the counter.

Prepare the pistachios and butter

Coarsely chop the Antep pistachios with a knife; grinding them in a food processor will release their oil and make them clump. Melt the butter over low heat and let it stand for 3 minutes, until the white solids settle to the bottom. Pour the clear butter into another container. If you skip this clarification, the phyllo will burn instead of browning.

Gather the phyllo on a rolling pin

Lay out one sheet of phyllo, brush it with clarified butter, and arrange a line of pistachios along one edge. Loosely roll the sheet around a rolling pin, then push both ends toward the center with your hands to gather it. The folds should look like an accordion, and the roll should shrink to 25 cm on the rolling pin. Slide out the pin. Repeat with the remaining sheets.

Arrange in the pan

Starting in the center of a greased round pan, arrange the rolls in a spiral like a snail shell. Leave a fingertip-width gap between them; if packed too tightly, they will stick together during baking and be hard to slice. Drizzle the remaining clarified butter over the top.

Bake

45 min

Bake on the bottom rack of an oven preheated to 180°C / 355°F for 25 minutes, then move the pan to the middle rack and bake for 20 minutes. It is ready when the top is evenly golden and the rolls do not shift when you shake the pan. If the color is uneven, turn the pan during the last 10 minutes.

Add the syrup

As soon as the pan comes out of the oven, ladle the cooled syrup over the baklava, moving from the edges toward the center. The syrup has absorbed when the sizzling stops. Tilt the pan to check for syrup pooling at the bottom; if it does, leave the baklava uncovered until the excess is absorbed.

Reminder

The syrup should be completely cool and the baklava freshly out of the oven. If both are hot when combined, the phyllo will not absorb the syrup properly; it will pool at the bottom of the pan and leave the lower layers soggy.

Şerbeti en başta kurma uyarısı önemli. Sıcak baklavaya sıcak şerbet gidince hamur yumuşadı.

Oklavada büzerken yufkanın kurumaması için üstünü nemli bezle örtün, kuruyan çatladı. Şerbeti dökerken kenarlardan başlayıp ortaya doğru gezdirdim, ortadan dökünce sarmalar o noktada çöküyor.
