Gribiche is a mayonnaise-style sauce made with mashed hard-boiled egg yolks instead of raw yolks. Olive oil is slowly emulsified into the yolks. Because it contains no raw egg, it keeps safely in summer. Capers, cornichons, and three fresh herbs make it a substantial accompaniment rather than a simple condiment. In France, it is served with boiled meats, tongue or head, and poached fish.

Hard-boil the eggs

Lower the eggs into boiling water with a spoon. Boil for 9 minutes, then transfer them directly to ice water. Nine minutes fully sets the yolks without drying them out; eggs boiled for 12 minutes develop a gray ring around the yolk and crumble. Once cool, peel them.

Separate the yolks and whites

Cut the eggs in half and scoop the yolks into a bowl. Set the whites aside on a separate cutting board; they are not mashed and will be finely chopped at the end to add texture. Keep the two parts separate.

Mash the yolks and add the mustard

Press the yolks against the side of the bowl with the back of a fork until completely smooth. Add the mustard, half the apple cider vinegar, and salt. Mix into a smooth paste; this is the base of the emulsion, and lumps can keep it from holding oil.

Add the olive oil drop by drop

Whisk continuously as you first add the olive oil drop by drop. Once the sauce thickens and begins to shine, pour it in a thin stream. When the sauce reaches a mayonnaise-like consistency, add the remaining vinegar to loosen it. If it becomes too thick, thin it with a 4 ml measure of warm water.

Fold in the chopped ingredients and let rest

Finely chop the egg whites, capers, cornichons, and shallot, then stir them into the sauce. Add the three herbs, grind in black pepper, and taste. Capers and cornichons are salty, so you may not need more salt. Refrigerate until serving; the herbs flavor the sauce in 20 minutes.

Reminder

For the first 1 minute of mashing the yolks, add the olive oil drop by drop. If you pour it in all at once, the emulsion will split before it forms and the sauce will separate. If it does split, gradually whisk the broken sauce into a fresh mashed egg yolk.
