Labneh is a common part of Saudi breakfast tables. In this no-cook recipe, it is wrapped in thin cucumber ribbons in a child-friendly form. The minty labneh filling makes a fresh, low-carb breakfast.

How to make it?

Slice the Cucumbers

Use a mandoline to slice the cucumbers lengthwise into thin ribbons. Gently pat away the moisture with a paper towel.

Make the Labneh Filling

Mix the labneh with the mint, olive oil, lemon juice, and salt until smooth.

Roll

20 min

Place a 4 ml measure of labneh filling at one end of each cucumber ribbon and roll it tightly. Secure with a toothpick to keep it from unrolling.

Plate and Serve

5 min

Arrange the cucumber rolls on a plate, sprinkle sesame seeds on top, and serve immediately.

Reminder

Pat the cucumber ribbons dry with a paper towel before rolling them, or the filling may slide and the rolls may unroll. Allergens: contains milk and dairy products (labneh) and sesame.

Salatalıkları 2 milimetre kalınlığında kesince sarmak çok daha kolay oldu, kalın kesince harç dışarı taşıyordu. 20 dakikalık sarma süresi bende tam tuttu, dört çocuk için yeterliydi.

Kızım tabakta salatalık görünce yüz buruşturdu ama rulo haline gelince hepsini yedi. Nane yerine dereotu denedim, o da çok hoştu.
