Semolina pudding gets its body not from starch but from semolina absorbing the milk and swelling. Starch pudding is glassy smooth; this version has a slight graininess and a fuller flavor. Toasting the semolina in butter first is essential: untoasted semolina clumps in the milk and leaves a raw flour smell.

Toast the semolina

Melt the butter in a saucepan, add the semolina, and toast over medium heat, stirring constantly with a wooden spoon. It is ready when the semolina lightens slightly in color and smells nutty; lower the heat before it turns brown. Toasting coats the grains with fat and keeps them from clumping when the milk is added.

Add the milk

Pour the cold milk over the toasted semolina in a thin stream while stirring constantly. If you pour it all in at once, the semolina will swell immediately and clump. Add the sugar at this stage and stir until dissolved.

Cook until thickened

Bring the mixture to a boil over medium heat. Once it boils, lower the heat and cook for 8 more minutes, scraping and stirring the bottom of the pan. Remove it from the heat when it coats the back of a spoon and a line drawn through it with a finger stays open for 1 second. It will thicken further as it cools, so leave it fluid on the stove.

Pour into bowls

Divide the mixture among bowls and smooth the surfaces with the back of a wet spoon. Do not cover the bowls; condensation will collect and drip onto the surface. Once cooled, garnish with walnuts and cinnamon and serve.

Reminder

Let the pudding sit at room temperature for 1 hour, then refrigerate for 2 hours; this time is not included in the recipe duration. Semolina continues to thicken as it cools, so if you cook it until very thick on the stove, it may set too firmly when chilled.
