These sesame-coated bread rings are made by dipping yeasted dough in grape molasses and water, coating it generously with sesame seeds, and baking until crisp outside and soft inside. This homemade take on a popular street food is also welcome at the breakfast table.
Dissolve the yeast and sugar in warm water and let stand for a few minutes. Add the flour, salt, and oil, then knead until the dough is elastic.
Cover the dough and let it rise in a warm place until doubled in size.
Divide the dough into pieces and roll each into a long, thin rope. Fold and twist it, then join the ends to form a ring.
Mix the grape molasses with the water. Dip each ring in the mixture, then coat generously with sesame seeds.
Bake in an oven preheated to 200°C / 390°F until the rings are golden and the sesame seeds are lightly toasted. Caution: Check them during the final minutes to keep the sesame seeds from burning.
Important: Coat the simit in sesame seeds immediately after dipping it in the grape molasses mixture; otherwise, the seeds will not stick. Allergens: contains wheat (gluten) and sesame.
