A common weeknight dish in Brazil, this pasta combines leftover boiled chicken from the night before, shredded and added to a sauce made with tomato, pepper, and onion. It is a practical, filling way to use leftover chicken.

Step by Step

How to make it?

1

Boil the pasta

10 min

Boil the penne in plenty of salted water for 1 minute less than the package directions, then drain.

2

Make the Sauce

8 min

Cook the onion and red bell pepper in olive oil until tender. Add the garlic, then stir in the tomato sauce and bring to a boil.

3

Add the Chicken

4 min

Add the shredded cooked chicken to the sauce and heat for 4 minutes. Season with salt and black pepper.

4

Toss and Serve

3 min

Toss the drained penne with the sauce and serve hot.

Reminder

Before mixing the pasta with the sauce, reserve half of a 200 ml measure of the pasta water. If the sauce is too thick, use the water to thin it. Allergen: Contains wheat (gluten).
