Shrikhand is a strained-yogurt dessert from the Indian states of Maharashtra and Gujarat. Hang the yogurt in a cloth to drain, then whip the thickened yogurt with confectioners’ sugar, saffron, and cardamom. It is not cooked and contains no gelatin or eggs; its thick texture comes entirely from draining the whey. In India, it is usually served cold with hot puri.

Hang the yogurt in a cloth

Line a strainer with two layers of cheesecloth, set it over a bowl, and pour in the yogurt. Gather and tie the corners of the cloth, then refrigerate the bundle suspended over the bowl. As the whey drains away, the yogurt will lose nearly half its weight.

Steep the saffron in milk

Crumble the saffron into the warm milk and let it steep until the milk turns deep yellow.

Whip the strained yogurt

Untie the bundle; the yogurt should now be thick enough to stay on a spoon. Push it through a fine-mesh sieve or whisk until smooth. Add the confectioners’ sugar and continue whisking until it has completely dissolved.

Add the flavorings

Add the saffron milk and crushed cardamom and stir until the color is an even pale yellow. Taste; if the yogurt’s tartness overpowers the sweetness, add another 15 ml measure of confectioners’ sugar.

Divide among bowls

Spoon the shrikhand into small bowls, sprinkle with chopped pistachios, and chill in the refrigerator before serving.

Reminder

Hang the yogurt in the refrigerator overnight so it drains thoroughly; otherwise, the shrikhand will not hold its shape on a spoon. Keep the finished dessert chilled until serving. Allergen: Contains milk and dairy products and tree nuts. Check packaged products for other allergens.
