A baked pastry from Kayseri, sini boregi is made by dipping thin Turkish pastry sheets in a milky cheese mixture, layering them in a pan, and baking them. This technique gives the pastry a soft, substantial texture.
Whisk together the milk, egg, and oil.
Mix the cheese and parsley.
Dip the yufka sheets in the mixture and arrange them in a greased baking pan. Sprinkle with cheese filling after every 2–3 sheets.
Pour the remaining dipping mixture over the top and bake in an oven preheated to 180°C / 355°F for 35–40 minutes, until the top is golden brown.
Cut into slices and serve hot.
Store in a sealed container in the refrigerator for 3 days. To reheat while preserving the texture, warm it in the oven at 160°C / 320°F.
