Sinop dumplings are not tiny squares like Kayseri-style dumplings: the dough is rolled a little thicker, cut into thumb-width squares, and filled with ground beef and coarsely crushed walnuts. The walnuts release their oil as the dumplings boil, keeping the filling moist and adding a nutty flavor beneath the yogurt.

Knead the dough

Sift the flour into a large bowl, make a well in the center, and add the egg, salt, and water. Knead with a fork at first, then by hand for 10 minutes. The dough should be slightly firmer than an earlobe; if dumpling dough is as soft as bread dough, it will tear when rolled.

Prepare the filling

Grate the onion and squeeze out the liquid in your palm; watery onion will thin the filling and make the sealed edges open. Knead the ground beef with the squeezed onion, salt, and spices. Coarsely crush the walnuts with the back of a knife or in a mortar and stir them in last; finely ground walnuts disappear into the filling.

Roll out the dough

Divide the rested dough into four pieces. On a floured work surface, roll each piece with a rolling pin to 1.5 mm thick. Do not leave the rolled sheets uncovered; keep the pieces waiting their turn under a damp cloth.

Cut and fill

Cut the dough into 3 cm squares. Place a chickpea-sized portion of filling on each square, bring the four corners together in the center, and pinch the edges closed. Sinop-style dumplings are cut into large squares with plenty of filling; if the seams are not sealed, the filling will escape into the boiling water.

Boil the dumplings

Bring 3 l of salted water to a boil in a large pot. Add the dumplings one at a time and stir gently with a wooden spoon for the first 1 minute. Once they float to the surface, boil for 6 more minutes. Cut one open to check that no white, uncooked line remains in the center of the dough.

Add the sauces and finish

Whisk the strained yogurt with the crushed garlic. Melt the butter in a skillet and cook the tomato paste for 1 minute. Remove from the heat, then stir in the mint and red pepper flakes; burned tomato paste tastes bitter. Spoon the yogurt over the drained dumplings first, then drizzle with the butter sauce.

Reminder

Let the dough rest under a damp cloth for 40 minutes before rolling; dough that has not rested will spring back and resist rolling thin. This is inactive time and is not included in the cooking time. Taste the walnuts before adding them to the filling: one rancid walnut can make the whole batch bitter. Take the yogurt out of the refrigerator and let it sit at room temperature for half an hour; cold yogurt can curdle on the hot dumplings.
