Siopao, a popular Filipino street food, is made by filling a soft, lightly sweetened yeast dough with a chicken and soy sauce mixture, then steaming it. Its tender texture and sweet-savory balance make it a satisfying snack for any meal.
Knead the flour, yeast, lukewarm water, sugar, oil and salt until smooth. Leave to rise in a warm place for 70 minutes.
Sauté the onion and garlic, add the shredded chicken, then stir in the soy sauce and sugar and cook. Leave to cool.
Divide the risen dough into pieces and place some filling in each. Gather and seal the edges, then place the buns on baking paper.
Place the buns in a steamer over boiling water. Cover and steam for 18–20 minutes.
Important: Leave the dough in a warm place to rise for at least 1 hour; otherwise, it may not rise and can turn out firm. While steaming, keep the lid closed and avoid opening it often, or escaping steam may cause the dough to collapse. Allergens: contains wheat (gluten) and soy sauce.
