Chop leftover eggplant that was roasted and peeled the day before, then sauté it in garlic butter. Crack eggs into the pan and stir quickly. This budget-friendly, smoky skillet dish is ready in 15 minutes.

Step by Step

How to make it?

1

Saute the Garlic

1 min

Melt the butter in a skillet, add the minced garlic, and sauté for 0.5 minute until fragrant. Do not let it burn.

2

Warm the Eggplant

3 min

Add the chopped charred eggplant to the skillet, season with salt and black pepper, and sauté for 3 minutes to heat through.

3

Add the Eggs

3 min

Crack the eggs directly into the skillet, lightly break them up with a fork, and sauté for 3 minutes until slightly runny.

4

Serve with Cheese

1 min

Remove from the heat, sprinkle the grated kashar cheese over the top, and serve warm.

Reminder

Drain the charred eggplant well; otherwise, liquid will collect in the pan before the eggs cook. Take care not to burn the garlic, or it will turn bitter. Allergen: contains eggs and milk (butter).
