Sour cherry rice pudding is a layered dessert made by spooning thickened sour cherries into the bottom of a bowl and pouring rice pudding on top. The cherries are not mixed into the pudding because their acidity can curdle the milk and turn the rice pink; instead, they form a separate layer at the bottom. When a spoonful picks up both layers, the cherries’ tartness cuts through the sweetness. Cook off the cherries’ liquid first; watery cherries will thin the pudding from below.

How to make it?

Thicken the Cherries

Cook the sour cherries with 40 g sugar in a small saucepan over medium heat. The fruit will first release its juices, then the liquid will cook off; the mixture is ready when no watery liquid runs to the bottom as you tilt the pan. Remove it from the heat and let it cool until warm.

Cook the rice in water

20 min

Rinse the rice, then put it in a pot with 250 ml water. Cook over low heat for 20 minutes, until all the water is absorbed. When you press a grain, the center should still be slightly firm. This step releases the rice’s surface starch into the water.

Add the Milk and Simmer

Add the milk and sugar to the parboiled rice and bring to a boil. Reduce the heat and cook for 15 minutes, stirring occasionally. The mixture should thicken slightly but remain pourable.

Add the Starch

Whisk the starch with 100 ml cold milk until smooth, then strain it. Slowly pour it into the simmering mixture in a thin stream, stirring constantly. Cook for 4 more minutes, then remove from the heat.

Layer the Pudding

Divide the warm sour cherries among oven-safe bowls in a layer about a finger-width thick. Slowly pour the rice pudding over the back of a spoon onto the cherries. Pouring directly onto them may splash the cherries upward and mix the layers. Leave about a finger-width of space at the top of each bowl.

Broil the Top

15 min

Arrange the bowls in a deep baking pan and pour in hot water to a depth of about a finger-width. Set the oven to broil at 220°C / 430°F and cook for 15 minutes, until dark brown spots form on the surface. Stay nearby during the last 5 minutes.

Reminder

Add the sour cherry layer to the bowls warm, not hot. Pouring rice pudding over boiling-hot cherries will mix the two layers together and erase the separation.
