This South Indian-style sauce gets its body solely from the natural fat of the coconut milk. Tempered mustard seeds, curry leaves, dried red chili, garlic and turmeric flavor the sauce, with fresh cilantro stirred in at the end. It fits keto and low-carb meals.

How to make it?

Temper the spices

Heat the coconut oil and add the mustard seeds. Once they begin to crackle, add the curry leaves and dried red chili.

Add the garlic

Add the garlic and turmeric and sauté for 2 more minutes.

Thicken the sauce

35 min

Add the coconut milk and salt. Cook over low heat for 35 minutes, stirring occasionally, until the sauce thickens.

Add the cilantro

Remove the sauce from the heat, stir in the fresh cilantro, and serve.

Reminder

Cover the pan when adding the mustard seeds to the hot oil; they may pop and splatter. Allergen note: coconut is not shellfish, but people with nut allergies should use caution.

Sosun 35 dakikada koyulaşacağı yazıyor ama benimki 45 dakikada bile hâlâ akışkandı, hindistan cevizi sütünün markası mı etkiliyor bilmiyorum; kalabalık bir sofra için yeterince koyu olmayınca biraz hayal kırıklığı oldu.

Haklısınız, hindistan cevizi sütünün yağ oranı markadan markaya değişebiliyor ve bu doğrudan koyulaşma süresini etkiliyor. Yağ oranı düşük bir marka kullandıysanız 10-15 dakika daha kısık ateşte pişirmeniz yeterli olur, tarifi buna göre güncelleyeceğim.
