Combine the ingredients

Combine the apple slices, vinegar, brown sugar, raisins, dried chili pepper, cinnamon, and ground ginger in a pressure cooker.

Cook in the pressure cooker

Close the lid and bring to a boil over medium heat. Once the pressure cooker starts whistling, cook over low heat for 8 minutes.

Release pressure and fill the jars

10 min

Turn off the heat and wait 10 minutes for the pressure to release naturally. Open the lid and transfer the hot chutney to jars.

Reminder

The chutney may still look runny when you remove it from the heat; it will thicken as it cools, so do not overcook it. Let it reach room temperature before sealing the jars.
