This spicy fish stew is made by quickly cooking pieces of sea bass with tomatoes, hot green pepper and garlic in a pressure cooker. The pressure cooker lets the fish take on the vegetables’ flavors in a short time.
Finely chop the onion, garlic and hot green pepper, then sauté them in olive oil.
Add the chopped tomatoes and red pepper flakes, then sauté for 3 more minutes.
Arrange the pieces of fish on top and add the salt.
Close the pressure cooker. When it whistles, lower the heat and cook for another 4 minutes.
Wait for the pressure to drop before opening the lid. Drizzle with lemon juice and serve.
If you add the fish too early, it may fall apart in the pressure cooker, so let the sauce thicken a little first. Do not try to release the pressure early; wait for it to drop on its own. Allergen: contains fish (sea bass).
