Bring the strip steak slices to room temperature and press coarsely ground black pepper onto both sides.
Heat the butter in a skillet. Over high heat, cook the steaks for a few minutes on each side without moving them, to your preferred doneness. Set aside and season with salt.
Add the beef stock, cream, and mustard to the same skillet. Reduce the heat and stir until the sauce thickens.
Drizzle the sauce over the steaks and serve hot.
Important: Bring the meat to room temperature before putting it in the skillet; cold meat will not cook evenly. Allergen: contains dairy because of the cream. Caution: Reduce the heat when making the sauce; boiling can cause the cream to curdle.
