Syrian beef fatayer are pastries made with yeasted whole-wheat dough and a spiced ground-beef filling, folded into triangles and baked. They work as a meal or a packed snack, and stay tasty after cooling, making them a good late-night snack.

How to make it?

Knead and proof the dough

Mix the lukewarm water with the yeast and leave for ten minutes. Add the flour, olive oil and salt, knead into a soft dough and leave to rise in a warm place for one hour.

Prepare the filling

15 min

Cook the ground beef and onion in a pan until the liquid has evaporated. Stir in the sumac, pomegranate molasses and black pepper, then leave to cool.

Fold the pastries into triangles

30 min

Divide the dough into twelve pieces and roll each into a round. Put some filling in the center and firmly seal three edges to form a triangle.

Bake

25 min

Arrange the triangles on a baking pan and bake in an oven preheated to 200°C / 390°F for 25 minutes, until golden on top.

Reminder

Seal the tips of the triangles firmly, or the filling may spill out in the oven. Allergen: contains wheat (gluten).
