Sauces
Tahini and grape molasses, a classic pairing on Anatolian breakfast tables, are whisked into a pourable sauce in this recipe. Preventing the oil in the tahini from separating as it mixes with the grape molasses takes constant whisking and adding water at the right temperature.
Stir the tahini thoroughly in a deep bowl until the oil is evenly distributed.
Add the grape molasses and stir gently.
Gradually add the warm water while whisking constantly, continuing until the sauce is pourable.
Sprinkle the crushed walnuts over the top and serve.
Do not pour in all the water at once; adding it gradually helps prevent the oil from separating. Allergens: contains sesame (tahini) and tree nuts (walnuts).
