Tajine Tounsi is a frittata-like Tunisian dish made by mixing beaten eggs with kashar cheese, potatoes, and parsley, then baking the mixture in a deep pan. It is called by a distinct name to avoid confusion with Moroccan tagines, and can be served as a late-night snack or for breakfast.
Beat the eggs with the milk and salt. Add the potatoes, kashar cheese, and parsley, then mix.
Pour the mixture into a greased deep baking dish. Bake in an oven preheated to 180°C / 355°F for 30 minutes, until the center is slightly jiggly.
Remove from the oven, let rest for 5 minutes, then slice and serve.
Do not overcook the potatoes while boiling, or they may fall apart during baking. Do not extend the baking time; remove the dish while the center is still slightly jiggly, as it will continue to cook while resting. Contains eggs and dairy (kashar cheese).
