Talkan, a traditional drink of the Central Asian steppes, is made by pounding roasted wheat and mixing it with hot water. This simple, whole-grain drink is quick to prepare and makes a filling breakfast.

Roast the Wheat

Spread the wheat grains in a single layer in the air fryer basket. Roast at 200°C / 390°F for 8 minutes, shaking the basket occasionally. If you do not have an air fryer, roast them in an oven at the same temperature for the same amount of time, stirring occasionally.

Pound the Wheat

Once the roasted wheat has cooled, pound it in a mortar or pulse it in a blender until coarsely ground.

Mix and Serve

Mix the pounded wheat with the hot water, add the honey, and serve.

Reminder

Stir the wheat from time to time as it roasts; grains left in one spot may burn and taste bitter. If you do not have an air fryer, roast it in an oven preheated to 200°C / 390°F for the same amount of time, stirring occasionally. Allergen: contains gluten (wheat).
