Tartar sauce is a cold sauce for fish in which mayonnaise carries the tang and texture of pickles and capers. The acidity and finely chopped bits, rather than the sauce’s fat, cut through the richness of fried fish. Finely chop the pickles with a knife instead of grating them. Serve it with fried foods ranging from calamari to sea bream.

Chop the pickles and capers

Finely chop the cornichons, capers, and onion separately, to about the size of a grain of rice. Place them on a paper towel and press with your palm to remove their moisture; you will see the towel get wet. If you skip this step, liquid will collect at the bottom of the sauce within half an hour.

Combine with the mayonnaise

Put the mayonnaise in a bowl and stir in the mustard and black pepper. Add the chopped pickles, capers, and onion, then fold them in with a spatula; do not whisk, as thinned mayonnaise will not thicken again. Fold in the finely chopped parsley last.

Adjust the acidity and salt

Add the lemon juice and taste. Since the capers and pickles are already salty, add salt at the end; you may find that none is needed. The sauce should flow slowly from a spoon. If it is too thick, thin it with a 5 ml measure of pickle brine.

Reminder

If the pickles and capers are not drained after chopping, the sauce will become watery within the first hour. Store the prepared sauce in a covered container in the refrigerator; discard it if its smell or appearance changes.
