Tastira is a Tunisian meze made by sautéing grilled green peppers and tomatoes with garlic and harissa, then cracking eggs over the vegetables. Made without bread or starch, it is a light lunch or brunch option.

How to make it?

Char the vegetables

Grill the green peppers and tomatoes for 15 minutes, turning them until their skins blister, then peel.

Sauté

10 min

Chop the charred peppers and tomatoes and sauté in olive oil with the garlic, harissa and cumin for 10 minutes.

Add the eggs

10 min

Reduce the heat, crack in the eggs and add the salt. Cook for 10 minutes, stirring gently, until the egg whites turn opaque.

Reminder

Do not peel the peppers as soon as they come off the grill. Leave them to steam for a few minutes so the skins come off more easily. Reduce the heat as soon as you add the eggs to stop them becoming tough. Allergens: contains egg.

Biberleri ızgarada közlerken yeterince soymadan doğradım, ağızda kabuk pürüzü kaldı; ateşi de biraz fazla açık tutunca yumurtalar sertleşti. Yine de tadı fena değildi, bir dahakine kabukları daha titiz ayıklayacağım.
