This Denizli specialty is made with unleavened, oil-free dough rolled into thin yufka (Turkish pastry sheets), folded and cooked on a griddle. Oil is brushed on after cooking, so the layers stay separate and the pastry becomes crisp. The filling combines dry, salty Turkish curd cheese with softer white cheese.

How to make it?

Knead the dough

Put the flour and salt in a large bowl. Gradually pour in the lukewarm water as you knead. After 10 minutes, the dough should no longer stick to your hands and should feel slightly firmer than an earlobe. Do not add oil or yeast; the dough contains only flour, water and salt.

Divide into dough balls

Divide the dough into six equal pieces and roll them into balls. Cover with a damp cloth.

Make the filling

Mash the çökelek with a fork and grate the white cheese. Mix them with the finely chopped parsley. The filling should be moist but not watery; if it is too wet, drain it in cheesecloth so it does not tear the yufka.

Roll out the yufka

On a floured counter, roll each dough ball into a 40 cm circle, thin enough to read a newspaper through. Place one-sixth of the filling in a strip across the center of each sheet.

Fold the pastry

Fold the bottom and top edges over the filling, then fold in the right and left edges to make an envelope about 15 cm long. Press the edges together with your fingers to seal them; any opening will let the filling leak onto the griddle.

Cook on the griddle

Heat a griddle or large skillet over medium heat without oil. Place the folded pastries seam-side down and cook each side for 3–4 minutes, until dark brown spots appear. While they are still hot, brush melted butter over both sides.

Reminder

Divide the kneaded dough into balls and cover them. Let them rest for at least 30 minutes; dough that has not rested will spring back as you roll it, making it difficult to get thin yufka sheets.
