This compote has the sweet, sour, and spicy balance of Thai cooking. It is made by quickly pressure-cooking overripe leftover pineapple and mango with chili, lime, and mint. With no added sweetener or solid fat, it makes a heart-friendly breakfast side.
Dice the softened leftover pineapple and mango. Remove the chili seeds and finely chop the chili.
Put the fruit, chili, and cinnamon in the pressure cooker and close the lid. Cook for 6 minutes from the first whistle, then let the pressure release naturally.
Open the lid and add the lime juice and chopped mint. Stir gently and serve warm or cold.
If you add the chili with its seeds, the compote may be much spicier than expected. Finely chop it, taste, and add gradually. Let the pressure cooker release pressure naturally rather than rushing it.
