Inspired by Thai street food, this grilled edamame is made by marinating fresh soybeans in their pods with garlic, chili and sesame oil, then charring them. Served with lemon juice and coarse salt, these beans make a light yet satisfying snack between meals.
Boil the edamame in salted water for 3 minutes, then drain.
Toss the drained edamame with the garlic, chili, sesame oil and soy sauce. Rest for 10 minutes.
Leave the marinated edamame at room temperature for 10 minutes to allow the flavor to penetrate the pods.
Cook the marinated edamame on a hot grill, turning until the pods are lightly blackened.
Squeeze lemon juice over the edamame and serve with coarse salt.
