This version of larb, the tangy, spicy Thai salad, uses finely cut beef liver quickly cooked in a hot pan, then mixed with toasted rice, mint, scallion and chili. Dressed with lemon juice and fish sauce, it is served wrapped in lettuce leaves.

Toast the rice in a dry frying pan for 5 minutes, until brown, then coarsely crush in a mortar.
