This cold dessert, popularized at Bangkok’s night markets, is made by spreading a creamy mixture on a chilled metal tray, where it freezes in seconds and can be rolled into strips. Strawberry is the classic version, and spreading the mixture into a very thin layer takes a deft touch. The same technique can be used in a home kitchen.

Prepare the Tray

Place a flat metal tray in the freezer at least 1 hour before you begin, until thoroughly chilled.

Make the Mixture

Whisk the cream, milk, honey, and vanilla in a bowl. Add the chopped strawberries and stir.

Freeze and Spread on the Tray

Pour the mixture onto the ice-cold tray and quickly spread it into a thin layer with a spatula; it will start freezing within seconds.

Roll

Use a spatula to scrape the frozen layer into strips 5–6 centimeters wide, then roll them up.

Reminder

If the tray is not cold enough, the mixture will not freeze and cannot be rolled. Use a tray that has been in the freezer for at least 1 hour. Allergen: Contains dairy (cream and milk).
