A quick Saudi meze, toasted bulgur with tomato sauce is made by briefly sautéing precooked fine bulgur with tomato paste, cumin, and red pepper flakes, then brightening it with lemon juice. The bulgur adds texture and whole-grain depth to the sauce.
Heat the olive oil in a pan, add the tomato paste, and sauté briefly.
Add the cooked bulgur, cumin, and red pepper flakes and stir. Cook over low heat for 5 minutes.
Remove from the heat, add the salt and lemon juice, and stir. Serve warm.
Do not add the bulgur until the tomato paste has been thoroughly sautéed in the oil; the raw taste of the paste can make the rest of the sauce bitter. Contains wheat (gluten).
