Orzo (kritharaki) is quickly toasted in an air fryer until nutty, then simmered in tomato sauce. This Greek-style pilaf is made without dairy or cheese and is diabetes-friendly and suitable for a lunchbox.

Toast the orzo

Spread the orzo in the air fryer basket and toast it lightly at 180°C / 355°F for 5 minutes. If you do not have an air fryer, toast the orzo on a baking sheet in an oven preheated to 180°C / 355°F for 8 minutes.

Sauté the vegetables

10 min

Sauté the onion and garlic cloves in olive oil until softened, then add the tomato and cook for 5 more minutes.

Cook the pilaf

15 min

Add the toasted orzo, hot water, salt, and black pepper. Simmer over low heat for 15 minutes, until the water is absorbed.

Reminder

Stir the orzo often as it toasts; it can brown and burn quickly in the air fryer. Contains gluten from the orzo.
