A homemade winter tomato preserve made by simmering ripe tomatoes until thick, without additives. This kitchen staple adds deep tomato flavor to dishes, soups, and sauces.

How to make it?

Prepare the tomatoes

Wash and peel the ripe tomatoes, cut them into large pieces, and place them in a large pot.

Cook and strain

Cook the tomatoes over low heat until soft, then blend them or press them through a sieve to remove the seeds and pieces of skin.

Reduce until thick

Add the salt to the strained tomato purée. Simmer over low heat, stirring frequently, until it is thick enough to leave a trail on the back of a spoon.

Fill the jars

Fill sterilized jars with the hot tomato paste, drizzle a thin layer of cooking oil over the top, and seal the lids tightly.

Reminder

Important: After filling the jar, drizzle a thin layer of oil over the paste to help keep it from spoiling for a long time; this layer blocks its contact with air. Stir frequently while simmering to prevent sticking. After opening, store it in the refrigerator and use a clean spoon each time.
