Austria’s thin pancakes, known as palatschinken, are filled with quark, lemon zest, vanilla, and currants, then rolled up. This no-cook dessert is a quick option for serving on a platter at a gathering.

Step by Step

How to make it?

1

Prepare the Filling

5 min

Mix the quark with the sugar, lemon zest, vanilla, and currants until smooth.

2

Fill and Roll the Crepes

7 min

Lay each crepe flat on a clean surface. Spread one spoonful of the quark filling over it, then roll it up tightly.

3

Slice and Serve

3 min

Cut the rolls diagonally, arrange them on a platter, dust with confectioners’ sugar, and serve right away.

Reminder

Do not make the filling too wet, or the crepes may tear as you roll them. Contains wheat (gluten), milk and dairy products, and eggs.
