A favorite on Cuban party tables, this moist cake is made by folding chopped pineapple into a classic cake batter and baking. Leftover slices develop an even richer flavor after a day in the fridge.
Beat the eggs and sugar until increased in volume.
Mix in the oil, then sift in the flour, baking powder and salt.
Fold the chopped pineapple into the batter.
Pour into a cake pan and bake in an oven preheated to 175°C / 345°F for 25 minutes, until a skewer inserted into the center comes out clean.
Drain the pineapple well, or the batter may be too wet and remain raw in the center. If the top darkens too much during baking, cover loosely with aluminum foil. Contains wheat (gluten) and egg.
