Finely chop the onion, red pepper, and ginger.
Put all the ingredients in a pot with the vinegar and salt. Simmer over low heat for 20 minutes, until the sauce thickens.
Blend the sauce until smooth. Let cool, then transfer it to a jar.
When blanching tree tomatoes, wait for their skins to split; otherwise, they will be harder to peel. The sauce keeps in a jar in the refrigerator for up to 2 weeks.
