Make the Dough
10 minKnead the crushed peanuts, whole-wheat flour, rice flour, coconut milk, sugar, and salt in a bowl until a sticky, dense dough forms.
Tua tad are traditional Thai fried cookies made by mixing crushed peanuts with whole-wheat and rice flour, shaping the dough into thin, flat rounds, and frying them in hot oil. If they are not rolled thinly, the centers may remain raw.
Knead the crushed peanuts, whole-wheat flour, rice flour, coconut milk, sugar, and salt in a bowl until a sticky, dense dough forms.
Pinch off small pieces of dough and shape them in your palm into flat rounds about 3 mm thick. If they are not thin and even, the centers may stay raw while frying.
Heat the sunflower oil over medium heat and fry the cookies for 7 minutes, until golden and crisp.
Transfer to paper towels to drain off excess oil. Let cool before serving.
Keep the oil from getting too hot; otherwise, the outside can burn before the centers cook. Contains wheat (gluten) and peanuts.
