A classic Turkish dessert made by piping cooked dough into hot oil, frying it until crisp, then soaking it in cold syrup. Serve it hot so it absorbs the syrup well.

How to make it?

Make and cool the syrup

Boil the sugar and water, then add the lemon juice. Boil for a few more minutes, remove from the heat and let the syrup cool completely.

Cook the dough

15 min

Bring the water and butter to a boil. While boiling, add all the flour at once and stir until the dough comes together. Once it has cooled slightly, add the eggs and semolina, then knead until smooth.

Shape and fry

15 min

Pipe or shape the dough by hand into short finger-length pieces. Fry in oil over medium heat until golden.

Soak in the syrup

10 min

Immediately place the hot tulumba in the cold syrup. Leave them for a few minutes so they absorb the syrup well.

Reminder

Allergens: contains wheat (gluten) and egg. Important: The syrup should be cold and the dough hot. If both are at the same temperature, the tulumba may not absorb enough syrup and can remain dry inside.
