Prepare the Kofta Mixture

Inspired by Tunisia's spice markets, these skewers are made with ground beef seasoned with ground coriander and cumin, grilled and served with spicy harissa. Whole-wheat couscous on the side makes this a hearty whole-grain meal.
Mix the ground beef with grated onion, crushed garlic, ground coriander, cumin, black pepper, and salt. Refrigerate the mixture so it stays cold and holds together better on the skewers.
Divide the mixture into 8 equal portions and press each around a soaked skewer to form a long oval kofta. Wet your hands often with cold water so the mixture does not come away from the skewers.
Arrange the kofta on a well-heated grill and cook each side for 3–4 minutes, turning until browned on the outside and still firm inside. Drizzle with olive oil just before cooking.
Pour an equal amount of boiling water over the whole-wheat couscous, cover, and let stand for 5 minutes. Fluff with a fork, drizzle with harissa, and serve with the kofta.
Remember to wet your hands with cold water before shaping the kofta around the skewers; warm meat can stick to your hands and lose its shape. Contains wheat (gluten).
