Turkish dumplings are served with two sauces that mingle on the plate: cold garlic yogurt and hot tomato butter. The order and temperature matter. Spread the yogurt first, then drizzle the hot butter over it. Pouring very hot butter directly onto cold yogurt can make it curdle and turn grainy.

Prepare the yogurt

Pound the garlic with the salt in a mortar until it forms a paste. Whisk the room-temperature strained yogurt in a large bowl, then mix in the garlic. Adjust the consistency with water: the sauce should flow slowly from a spoon, neither so thick that it will not flow nor so thin that it slides off the dumplings.

Heat the butter

Melt the butter in a small skillet over low heat. When the foaming subsides and the butter looks clear, add the tomato paste and cook for 60 seconds, until its raw aroma fades. Do not cook the paste over high heat; burnt tomato paste turns bitter and can overpower the whole sauce.

Add the spices and drizzle

Remove the skillet from the heat, wait 30 seconds, then add the Turkish red pepper flakes and mint. If you add the spices over the heat, they may burn before toasting. Spoon the yogurt over the hot dumplings first, then drizzle the butter around the edges.

Reminder

Take the yogurt out of the refrigerator half an hour before using it; this passive rest is the simplest way to prevent curdling. Do not grate the garlic; crush it with salt in a mortar, as grating can bring out a harsh aroma. After removing the butter from the heat, wait 30 seconds before drizzling it over the yogurt.
