These no-cook radish pickles are made by packing sliced radishes in jars with a vinegar brine and leaving them in the fridge. Kept low in carbohydrates, they make a meze suitable for a ketogenic diet.

How to make it?

Make the brine

Mix the vinegar, water and salt until the salt dissolves.

Fill the jar

Pack the thinly sliced radishes and garlic into a clean jar and pour the brine over them.

Leave to pickle

Close the lid and refrigerate for at least 24 hours.

Reminder

Slice the radishes thinly and evenly; thick slices will not absorb enough brine. Leave for at least 24 hours, as the tangy flavor will not develop fully if eaten sooner. Allergens: this recipe contains none of the major allergen groups.
