This simple pickle of cauliflower, carrots and peppers in a vinegar brine appears in almost every Balkan cuisine. Cutting the vegetables into even pieces helps the salt penetrate each one equally. Made with few ingredients, it is easy to pack for lunch or take on a picnic.
Cut the cauliflower, carrots and green peppers into evenly sized pieces and pack tightly into jars.
Bring the vinegar, water and salt to a boil in a pan.
Pour the boiling brine over the vegetables and close the lids.
Once the jars have cooled at room temperature, leave them in a dark place for at least 1 week.
Pack the vegetables tightly into the jars before pouring over the hot brine. Loosely packed vegetables may float to the surface and spoil.
