This refreshing sauce combines grated cucumber with strained yogurt and garlic. In Greek cuisine, it is a classic accompaniment to gyros and souvlaki, and is especially popular in summer.

How to make it?

Prepare the cucumber

Grate the cucumber and sprinkle it with a pinch of salt. Let it rest for 10 minutes, then squeeze it firmly by hand to remove the liquid.

Mix with the yogurt

Thoroughly mix the drained cucumber with the strained yogurt and crushed garlic.

Season and chill

Stir in the olive oil, fresh mint if desired, and salt. Chill the sauce for at least 20 minutes.

Reminder

Contains dairy. Thoroughly squeeze and drain the grated cucumber before adding it to the yogurt, or the sauce will become watery. Make the sauce at least half an hour before serving and chill it so the flavors can meld.
