Oladki are small, fluffy Ukrainian breakfast pancakes made by cooking small rounds of kefir batter in an air fryer with a little oil. Lighter than pan-fried pancakes, these mini pancakes also fit easily in a lunchbox.

How to make it?

Mix the batter

Whisk the kefir and egg in a bowl. Add the flour, sugar, baking powder, and salt, and mix until smooth and lump-free without overmixing.

Let the batter rest

15 min

Cover the batter and let it rest on the counter for 15 minutes; this helps the baking powder work.

Fill the molds

10 min

Spoon the batter into lightly oiled silicone mini muffin molds, filling each halfway.

Air-fry

10 min

Cook in a preheated air fryer at 180°C / 355°F for 10 minutes, until puffed and golden. If you do not have an air fryer, bake the same molds in a preheated 200°C / 390°F oven for 15 minutes.

Reminder

Do not overmix the batter, or the bubbles formed by the kefir and baking powder will collapse and the pancakes will not rise well. Allergens: milk, wheat (gluten), and eggs.

Hamuru karıştırırken biraz fazla çırptım galiba, pankekler beklediğim kadar kabarmadı ve daha yassı çıktı. Airfryer'da 10 dakika yeterli oldu ama bir dahaki sefere sadece topaksız olana kadar karıştıracağım.
