Preheat the oven to 190°C / 375°F. Toss the sliced potatoes with the melted butter and arrange them in a single layer in a shallow baking dish.
Bake the potatoes in the preheated oven for 10 minutes, until the edges are lightly browned.
Remove the potatoes from the oven and crack the eggs over them one at a time. Season with salt and black pepper and sprinkle with scallions.
Sprinkle the grated Kashar cheese over the top and bake for 15 more minutes, until the egg whites are set.
Let the casserole rest for a few minutes after removing it from the oven. Add 1 spoonful of sour cream to each serving and serve hot.
Prebake the potatoes for 10 minutes before cracking on the eggs; otherwise, the potatoes will still be cold by the time the egg whites set. Allergen: contains eggs and dairy.
