A staple of the Ulster breakfast in Northern Ireland, this potato bread is made by kneading boiled, mashed potatoes with a little flour, shaping the dough into triangles, and pan-cooking them. It has a lightly crisp exterior and a soft center, and is also enjoyed at tea time.

How to make it?

Boil the potatoes

Boil the potatoes with their skins on. Once tender, peel and mash them while still hot.

Knead the dough

Add the melted butter, flour, baking powder, and salt to the mashed potatoes and knead into a soft dough.

Roll and cut

On a floured work surface, roll the dough into a round about 1 cm thick and cut it into four equal triangles.

Cook in a pan

Cook the triangles in a dry pan over medium heat for 4 minutes per side, until golden. If you have an air fryer, line the basket with parchment and cook them for 12 minutes, turning halfway through.

Reminder

Mash the potatoes while they are hot; mashing them after they cool can make the dough sticky. Allergens: contains wheat (gluten) and dairy (butter).

Elimde tereyağı kalmamıştı, tereyağı yerine zeytinyağıyla denedim ama hamur gevşek kaldı ve tavada dağıldı; tereyağının bağlayıcı etkisi burada gerçekten önemliymiş, ikinci denemede tereyağı bulup aynı tarifi tekrarlayınca sorun tamamen çözüldü.
