How to make it?

Prepare the bread

Soak the stale bread in water for a few minutes, then squeeze out the excess water by hand.

Blend the ingredients

Add the walnuts, soaked bread, garlic, and vinegar to a food processor and blend until smooth.

Emulsify with olive oil

Continue blending while adding the olive oil gradually. If needed, add a few 15 ml measures of water to thin the mixture to a sauce-like consistency.

Serve

Transfer the walnut sauce to a bowl, adjust the salt, and serve cold with fried vegetables, fish, or bread.

Reminder

Add the olive oil gradually to keep the sauce smooth and emulsified. Allergens: contains walnuts (tree nuts) and wheat/gluten (bread). Store covered in the refrigerator for 2–3 days; let it come to room temperature before serving to soften the texture.
