Prepare the watermelon

This recipe uses watermelon’s juicy red flesh. The fruit is first macerated with sugar, then simmered until its juices reduce to a thick, deep red jam. Unlike versions made with the rind, this one uses the flesh itself, so it has a shorter shelf life but a much more concentrated flavor.
Remove the rind and seeds from the watermelon, cut the flesh into small cubes, weigh it, and place it in a bowl.
Sprinkle the sugar over the diced watermelon, cover the bowl, and let it stand at room temperature for 30 minutes; the fruit will release its own juices.
Strain off the juice released by the watermelon and simmer it alone in a separate saucepan for 15 minutes, until it thickens.
Add the watermelon cubes, lemon juice, and cinnamon stick to the thickened syrup. Cook over low heat for 45 minutes, skimming off any foam from time to time. Remove from the heat when the mixture turns deep red and reaches a thread-like consistency.
Because watermelon contains so much water, the cooking time may stretch to as long as 20 minutes depending on how ripe the fruit is; do not stop early, or the jam will become runny after opening. Do not reduce the sugar: watermelon has little pectin, and the high sugar content is what helps the jam set.
